Go to Review tab and right after Display for review button you can see four document icons with check mark, an x and arrows on them. To move between changes, use the arrows. To accept a change tap on the check mark and to reject a change, on the red x.

How to change text in the middle of a word? | Word for iPad
Put your finger on the screen around the place you want to change. Hold down until a magnifier glass appears. Move on the screen still holding the finger on it. With taking the finger off the screen you’re able to apply your changes, say add a letter.
