To change to double-space you have two options. You can change the entire document or selected paragraphs.

To change the entire document go to Home tab and under Styles. Click with your right mouse button on normal and choose “Modify”. Under formatting section choose “Double-space”. To change only some paragraphs, select the paragraphs and go to Home tab under Paragraph section. Click on “Line Spacing” and choose “2.0”.
